Case in point: We recently had to redesign and completely rewrite software that offshore "iPhone development experts" created because of their lack of experience and knowledge of Mac OS X. The software was written completely wrong, and the client had to hire us to rewrite it all. The client was thrilled with the results, but unfortunately learned an expensive lesson in the process.
Another client recently mentioned that he had requested a quote from another offshore "iPhone expert" and when he asked about the details of the quote was informed that it included purchasing Macintosh computers so their programmers could learn how to program the iPhone!
These problems are not limited to offshore developers, and there are absolutely other companies that do excellent Macintosh and iPhone software development. The important thing is not the number of employees they have--whether they have 5 or 500, you're probably only going to have 1 or 2 engineers working on your project anyway. What's important is understanding how long those engineers have been doing Macintosh development. If the engineers working on your project don't have years of Macintosh programming experience, then they are neither Macintosh nor iPhone software development "experts".
